Prawns eggplant salad.

            PRAWNS EGGPLANT SALAD.

INGREDIENTS 

Eggplant               - 5-6 (cut into small cubes)
Shallots                 - 10 (chopped)
Green chilli          - 2 (chopped)
Small prawns      - 150g
Salt                         - per needed
Lime juice             - per needed
Chilli flakes           - 1 tsp
Tumeric powder  - 1/2 tsp
Oil                           - per needed

METHOD

Step 1 - Add eggplant, pinch of salt and Tumeric powder mix well and keep aside.

Step 2. Heat oil in a pan and deep fry eggplant until brown colour.

Step 3. Deep fry small prawns (use the same oil).

Step 4. Cut Shallots and green chilli add to a bowl and add salt, lime juice and chilli flakes, mix well and finally add the fried eggplant and small prawns, mix well.
